Ingredients

1 cup rolled oats

1 cup finely grated carrots (approx. 1 large carrot)

1/2 cup almond butter (or any nut/seed butter)

1/4 cup honey or maple syrup

1 tsp vanilla extract

1/2 tsp ground cinnamon

1/4 tsp ground nutmeg

1/4 tsp ground ginger

1/4 tsp salt

1/2 cup chopped walnuts or pecans (optional)

1/2 cup raisins or dried cranberries (optional)

1/4 cup unsweetened shredded coconut (optional)

Instructions

Prepare the Ingredients: Start by grating the carrot finely and gathering all your ingredients. Feel free to customize by adding nuts or dried fruits.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, ground cinnamon, ground nutmeg, ground ginger, and salt. Mix well to ensure the spices are evenly distributed.

Create the Wet Mixture: In a separate bowl, whisk together the almond butter, honey (or maple syrup), and vanilla extract until smooth and well-combined.

Combine All Ingredients: Pour the wet mixture into the bowl of dry ingredients. Add the grated carrots and, if using, the chopped nuts and dried fruits. Stir everything together until fully combined. The mixture should be sticky and hold together. If it’s too crumbly, you can add a bit more nut butter.

Form the Bites: Using your hands, take small portions of the mixture and roll them into bite-sized balls (about 1 inch in diameter). Place them on a parchment-lined baking sheet or plate.

Chill to Set: Once all the mixture is shaped into balls, place the baking sheet in the refrigerator for at least 30 minutes. This will help them firm up.

Serve: After chilling, enjoy your Spiced Carrot Cake Energy Bites as a tasty snack or a quick breakfast on-the-go. Store leftovers in an airtight container in the fridge for up to a week.
