2 cups fresh mixed berries (blueberries, raspberries, and strawberries)

1 cup granulated sugar

2 tablespoons cornstarch

1 teaspoon ground cinnamon

1/2 teaspoon cayenne pepper (adjust to your spice preference)

Zest and juice of 2 limes

1 teaspoon vanilla extract

1 cup all-purpose flour

1/2 cup rolled oats

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup unsalted butter, melted

1/2 cup whole milk

Instructions
 

Preheat the oven to 350°F (175°C). Grease a 9x9-inch baking dish with cooking spray or butter.

    Prepare the berry filling: In a large mixing bowl, combine the berries, 1/2 cup of sugar, cornstarch, cinnamon, cayenne pepper, lime juice, lime zest, and vanilla extract. Mix well until the berries are coated, then pour the mixture into the prepared baking dish.

      Make the topping: In another bowl, whisk together the flour, remaining 1/2 cup sugar, rolled oats, baking powder, and salt. Pour in the melted butter and milk, and stir until just combined. The mixture may be slightly lumpy; that’s okay.

        Assemble the cobbler: Spoon the topping evenly over the berry filling, allowing some of the berries to peek through for a rustic look.

          Bake: Place the cobbler in the preheated oven and bake for 35-40 minutes, or until the topping is golden brown and a toothpick inserted into the topping comes out clean.

            Cool and serve: Let the cobbler cool for about 10 minutes before serving. It can be served warm or at room temperature, ideally with a scoop of vanilla ice cream or a dollop of whipped cream. Enjoy your spicy-sweet creation!
