Spicy Crispy Chickpea Lettuce Cups

Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon garlic powder

½ teaspoon cayenne pepper (adjust for spice level)

Salt and black pepper to taste

1 head of butter or iceberg lettuce, leaves separated and washed

1 ripe avocado, diced

1 medium tomato, diced

¼ cup red onion, finely chopped

¼ cup cilantro or parsley, chopped

Juice of 1 lime

Optional: ¼ cup crumbled feta cheese or dairy-free cheese for a vegan option

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare the Chickpeas: In a bowl, combine the drained chickpeas, olive oil, smoked paprika, ground cumin, garlic powder, cayenne pepper, salt, and black pepper. Toss well to coat the chickpeas evenly in the spices.

      Roast the Chickpeas: Spread the seasoned chickpeas in a single layer on the prepared baking sheet. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until they are crispy and golden brown.

        Prepare the Filling: While the chickpeas are roasting, prepare the other filling ingredients. In a medium bowl, combine the diced avocado, tomato, red onion, cilantro or parsley, and lime juice. Gently mix everything together and season with a pinch of salt and black pepper.

          Assemble the Lettuce Cups: Once the chickpeas are crispy, remove them from the oven and let them cool slightly. Take a lettuce leaf and spoon some of the avocado mixture into the center. Top with a generous amount of the roasted chickpeas.

            Optional Toppings: If desired, sprinkle crumbled feta cheese on top for an extra layer of flavor.
