1 cup mixed greens (spinach, arugula, kale, etc.)

1 cup cherry tomatoes, halved

1 cucumber, sliced

Instructions

Prepare the Meatballs:

    - In a large mixing bowl, combine ground turkey, breadcrumbs, Parmesan cheese, green onions, minced garlic, egg, Sriracha sauce, salt, black pepper, and smoked paprika. Mix until just combined; do not overmix.

      Form and Bake:

        - Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

          - Shape the turkey mixture into small meatballs, about 1.5 inches in diameter, and place them on the prepared baking sheet.

            - Bake in the preheated oven for 20-25 minutes, or until meatballs are cooked through and lightly browned.

              Prepare the Sauce:

                - While the meatballs are baking, mix together the Greek yogurt, mayonnaise, Sriracha sauce, lemon juice, and salt in a small bowl. Adjust the Sriracha according to your spice preference.

                  Assemble the Pitas:

                    - Warm the pita breads slightly in the oven or on a skillet.

                      - Cut the pitas in half to create pockets, and fill each pocket with a handful of mixed greens, a few meatballs, some cherry tomatoes, and cucumber slices.

                        Add the Sauce and Garnish:

                          - Drizzle the spicy yogurt sauce over the meatballs in each pita. Garnish with fresh cilantro or parsley for added freshness.

                            Serve:

                              - Serve warm, with extra Sriracha on the side for those who like it extra spicy! Enjoy your deliciously spicy pita sandwiches.
