Ingredients

2 ¼ cups all-purpose flour

1 tsp baking soda

1 tsp ground cinnamon

½ tsp ground ginger

½ tsp ground cloves

⅓ tsp salt

¾ cup unsalted butter, softened

1 cup brown sugar, packed

½ cup molasses

1 large egg

1 tsp vanilla extract

1 tbsp grated fresh ginger

½ cup raw sugar (for rolling)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper and set aside.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, ground cinnamon, ground ginger, ground cloves, and salt until well combined. Set aside.

Cream Butter and Sugar: In a large mixing bowl, use an electric mixer to cream together the softened butter and brown sugar until light and fluffy.

Add Wet Ingredients: Add the molasses, egg, vanilla extract, and grated fresh ginger to the butter-sugar mixture and beat until fully incorporated.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Be careful not to overmix; the dough should be soft and slightly sticky.

Chill the Dough: Cover the dough with plastic wrap and refrigerate for about 30 minutes. This keeps the cookies chewy and helps them maintain their shape.

Shape Cookies: Once chilled, scoop out tablespoon-sized portions of dough and roll them into balls. Roll each ball in raw sugar before placing them on the prepared baking sheets, spacing them about 2 inches apart.

Bake: Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are set and the centers look slightly underbaked. They will continue to firm up as they cool.

Cool Down: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. This will ensure they remain chewy and delicious.

Enjoy!: Once cooled, savor the combination of spicy and sweet flavors in these delightful chewy molasses cookies!
