1 cup red cabbage, thinly sliced

1 cup snap peas, trimmed

3 green onions, sliced

1/4 cup peanuts, crushed (for garnish)

Lime wedges (for serving)

For the Peanut Sauce:

1/2 cup creamy peanut butter

2 tbsp soy sauce (or tamari for gluten-free)

2 tbsp lime juice (freshly squeezed)

1 tbsp honey or maple syrup (for vegan option)

1 tbsp sriracha or more to taste (adjust for spice level)

1-2 garlic cloves, minced

1 tsp ginger, freshly grated

1/4 cup water (to thin the sauce)

Instructions
 

Cook the Noodles: In a large pot of boiling salted water, cook the rice noodles according to package instructions. Once cooked, rinse them under cold water to stop cooking, and set aside.
