Ingredients

1 medium seedless watermelon

1 cup feta cheese, crumbled

1/2 cup fresh mint leaves, chopped

1/4 cup balsamic glaze

1 tablespoon chili powder

1 tablespoon olive oil

1/2 teaspoon salt

1/2 teaspoon black pepper

12 small slider buns (or mini pita breads)

1 avocado, sliced

Optional: jalapeño slices for extra heat

Instructions

Prepare the Watermelon: Cut the watermelon into 1-inch thick slices. From each slice, use a round cookie cutter or cup to cut out circular patties. You should get approximately 12 watermelon patties from a medium-sized watermelon.

Season the Watermelon: In a small bowl, mix together the chili powder, salt, black pepper, and olive oil. Brush this mixture onto both sides of each watermelon patty.

Grill the Patties: Preheat your grill or grill pan over medium heat. Once hot, grill the watermelon patties for about 2-3 minutes on each side, until grill marks appear and it is slightly softened. Remove from the grill.

Assemble the Sliders: Take one slider bun and layer it with a grilled watermelon patty, a few slices of avocado, a sprinkle of crumbled feta cheese, and chopped fresh mint. Drizzle with balsamic glaze for added sweetness and depth of flavor. If you like it hotter, add jalapeño slices.

Serve: Place the top of the bun on each slider, and serve immediately. These sliders are best enjoyed fresh off the grill!
