Spinach and Feta Stuffed Shells

20 jumbo pasta shells

2 cups fresh spinach, chopped

1 cup feta cheese, crumbled

1 cup ricotta cheese

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 clove garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

2 cups marinara sauce (store-bought or homemade)

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Pasta: Boil a large pot of salted water. Add the jumbo pasta shells and cook according to package instructions until al dente. Drain and set aside to cool.

    Prepare the Spinach Mixture: In a large skillet over medium heat, add a splash of olive oil. Sauté the minced garlic until fragrant (about 1 minute). Add the chopped spinach and cook until wilted (about 3-4 minutes). Remove from heat.

      Mix the Cheeses: In a mixing bowl, combine the cooked spinach, feta cheese, ricotta cheese, mozzarella cheese, Parmesan cheese, oregano, basil, salt, and pepper. Mix well until all ingredients are blended.

        Stuff the Shells: Preheat your oven to 375°F (190°C). Take a spoonful of the cheese and spinach mixture and carefully stuff each shell. Place the filled shells in a greased baking dish.

          Add Marinara Sauce: Pour marinara sauce over the stuffed shells, ensuring they are lightly covered. Reserve a bit of sauce for serving.
