Spinach Artichoke Pinwheels

1 cup fresh spinach, chopped

1 cup artichoke hearts, drained and roughly chopped

1 cup cream cheese, softened

1/2 cup sour cream

1/2 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

2 cloves garlic, minced

1 teaspoon lemon juice

1/2 teaspoon red pepper flakes (optional)

4 large flour tortillas (10-inch)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Filling: In a large mixing bowl, combine the chopped spinach, artichoke hearts, cream cheese, sour cream, Parmesan cheese, mozzarella cheese, minced garlic, lemon juice, and red pepper flakes. Mix well until all ingredients are thoroughly combined. Season with salt and pepper to taste.

    Assemble the Pinwheels: Lay a tortilla flat on a clean surface. Spread a generous layer of the spinach-artichoke mixture evenly across the tortilla, leaving about a 1-inch border around the edges.

      Roll the Tortilla: Starting at one edge, carefully roll the tortilla away from you, keeping it tight but not overly so to avoid the filling spilling out. Continue rolling until you reach the end of the tortilla. Use a bit of the filling to seal the edge if necessary.

        Repeat: Repeat the process with the remaining tortillas and filling mixture until all are filled and rolled.

          Chill: Place the rolled pinwheels in the refrigerator for at least 30 minutes to firm up, which will make cutting easier.

            Slice and Serve: After chilling, remove from the refrigerator and slice each roll into 1-inch thick pinwheels. Arrange on a serving platter and garnish with chopped parsley.
