Spinach Chicken Casserole with Cream Cheese and Mozzarella

2 cups cooked chicken, shredded or diced

4 cups fresh spinach, chopped (or 2 cups frozen spinach, thawed and drained)

8 oz cream cheese, softened

1 cup mozzarella cheese, shredded (plus extra for topping)

1/2 cup sour cream

1/2 cup chicken broth

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1/4 cup grated Parmesan cheese (optional)

1 tsp olive oil

1 cup whole wheat pasta (optional, for a heartier dish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta (if using): In a large pot of salted boiling water, cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.

      Sauté the Spinach: In a large skillet, heat olive oil over medium heat. Add the chopped fresh spinach and sauté for 2-3 minutes until wilted. If using frozen spinach, simply heat it until warmed through. Set aside.

        Make the Creamy Mixture: In a large bowl, combine the softened cream cheese, sour cream, chicken broth, garlic powder, onion powder, salt, and pepper. Mix until well combined and smooth.

          Combine Ingredients: Stir in the cooked chicken, sautéed spinach, and cooked pasta (if using) into the creamy mixture. Mix until everything is evenly coated. Taste and adjust seasoning if necessary.

            Assemble the Casserole: Transfer the mixture into a greased 9x13 inch baking dish. Sprinkle the top with shredded mozzarella cheese and grated Parmesan cheese (if using) to create a cheesy crust.
