4 cups fresh baby spinach, washed and dried

2 ripe peaches, pitted and thinly sliced

½ cup crumbled goat cheese

¼ cup candied pecans (or walnuts)

¼ red onion, thinly sliced

½ cup cherry tomatoes, halved

3 tablespoons olive oil

2 tablespoons balsamic vinegar

1 tablespoon honey

Salt and pepper, to taste

Instructions
 

Prepare the Dressing: In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper. Taste and adjust seasoning as needed. Set aside.
