Ingredients
  

1 lb fresh salmon fillet, skin removed and cut into 1-inch cubes

ΒΌ cup honey

3 tablespoons Sriracha sauce (adjust to taste)

2 tablespoons soy sauce

1 tablespoon fresh lime juice

2 garlic cloves, minced

1 teaspoon grated fresh ginger

1 tablespoon sesame oil

Salt and black pepper to taste

1 red bell pepper, cut into 1-inch pieces

1 yellow bell pepper, cut into 1-inch pieces

1 small red onion, cut into wedges

Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

Instructions
 

Prepare the Marinade: In a bowl, whisk together honey, Sriracha, soy sauce, lime juice, minced garlic, grated ginger, sesame oil, salt, and pepper until well combined.

    Marinate the Salmon: Place the salmon cubes in the marinade, ensuring they are thoroughly coated. Cover and refrigerate for at least 30 minutes, allowing the flavors to meld.

      Assemble the Skewers: While the salmon marinates, prepare the vegetables. Once marinated, thread the salmon, red bell pepper, yellow bell pepper, and red onion onto the skewers, alternating between salmon and vegetables.

        Grill the Skewers: Preheat the grill to medium-high heat. Lightly oil the grill grates to prevent sticking. Place the skewers on the grill and cook for about 10-12 minutes, turning every few minutes until the salmon is cooked through and flakes easily with a fork.

          Serving: Remove the skewers from the grill and let them rest for a couple of minutes. Drizzle with any remaining marinade or extra honey for added flavor. Serve immediately with lime wedges on the side and garnish with fresh cilantro if desired.
