1.5 lbs chicken thighs (boneless and skinless)

1/3 cup soy sauce

1/4 cup honey

4 cloves garlic (minced)

1 inch ginger (grated)

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon red pepper flakes (optional)

Salt and pepper (to taste)

2 green onions (sliced, for garnish)

Sesame seeds (for garnish)

For the Sesame Rice:

1 cup jasmine rice

2 cups water

1 tablespoon sesame oil

2 tablespoons sesame seeds

1 tablespoon soy sauce

Salt (to taste)

1 stick of green onion (finely sliced, for garnish)

Marinade the Chicken: In a medium bowl, combine soy sauce, honey, minced garlic, grated ginger, rice vinegar, sesame oil, red pepper flakes, salt, and pepper. Whisk until well combined. Add the chicken thighs, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes (up to 2 hours for best flavor).

    Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until all water is absorbed. Once cooked, remove from heat and let sit for 5 minutes. Fluff the rice with a fork, then stir in sesame oil, soy sauce, sesame seeds, and salt to taste.

      Prepare the Chicken: Heat a large skillet over medium-high heat. Remove the chicken from the marinade (reserve the marinade) and add the chicken to the skillet. Sear for about 5-7 minutes on each side until golden brown and cooked through. You may need to do this in batches depending on the size of your skillet.
