For the Meatballs:

1 lb ground chicken or turkey

1/2 cup breadcrumbs (panko preferred)

1/4 cup grated Parmesan cheese

2 green onions, thinly sliced

4 cloves garlic, minced

1 inch fresh ginger, grated

1 large egg

2 tablespoons soy sauce

1 tablespoon sesame oil

Salt and pepper to taste

For the Sticky Garlic Teriyaki Sauce:

1/2 cup soy sauce

1/4 cup honey or brown sugar

2 tablespoons rice vinegar

2 tablespoons cornstarch

4 cloves garlic, minced

1 tablespoon sesame oil

1/2 teaspoon red pepper flakes (optional)

1 tablespoon water (for thinning)

For Serving:

Cooked jasmine or brown rice

Steamed broccoli or stir-fried vegetables (like bell peppers, snap peas, or carrots)

Sesame seeds for garnish

Additional sliced green onions for garnish

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare Meatball Mixture: In a large bowl, combine the ground chicken or turkey, breadcrumbs, grated Parmesan, sliced green onions, minced garlic, grated ginger, egg, soy sauce, sesame oil, and a pinch of salt and pepper. Mix until just combined.

      Form Meatballs: Using your hands, form the mixture into meatballs (about 1 inch in diameter). Place them on the prepared baking sheet.

        Bake Meatballs: Bake in the preheated oven for 20-25 minutes, or until cooked through and golden brown.

          Make Teriyaki Sauce: While the meatballs are baking, prepare the teriyaki sauce. In a medium saucepan, combine soy sauce, honey or brown sugar, rice vinegar, minced garlic, sesame oil, and red pepper flakes (if using). Whisk until smooth.

            Thicken Sauce: In a small bowl, mix cornstarch with water to create a slurry. Bring the sauce to a simmer on medium heat, then slowly whisk in the cornstarch slurry. Continue stirring until the sauce thickens (about 2-3 minutes). Remove from heat and set aside.

              Coat Meatballs: Once the meatballs are done baking, transfer them to a large bowl and pour the sticky teriyaki sauce over them. Toss gently until coated.

                Assemble Bowls: In each serving bowl, add a scoop of rice, a generous portion of the teriyaki meatballs, and your choice of steamed vegetables.
