2 tablespoons vegetable oil

1 medium onion, thinly sliced

3 cloves garlic, minced

1-inch piece of ginger, grated

1 cup bell peppers, thinly sliced (a mix of red and yellow)

1 cup sugar snap peas

1 cup bok choy, chopped

3 green onions, chopped

2 tablespoons soy sauce

2 tablespoons oyster sauce (or vegetarian substitute)

1 tablespoon hoisin sauce

1 tablespoon sesame oil

1 teaspoon chili flakes (adjust to taste)

Topping: toasted sesame seeds and fresh cilantro for garnish

Prepare the Noodles: Cook the rice noodles according to package instructions until al dente. Drain them and rinse under cold water to prevent sticking. Toss with a little sesame oil and set aside.

    Sauté Onions and Aromatics: In a large skillet or wok, heat vegetable oil over medium-high heat. Add in the sliced onion and stir-fry for about 2 minutes until slightly translucent.
