Ingredients

1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

2 tablespoons granulated sugar

8 oz cream cheese, softened

1/3 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 cup fresh strawberries, diced

Additional strawberries for garnish

Optional: a sprinkle of powdered sugar for dusting

Instructions

Prepare the Base: In a medium mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are well coated. Line a mini muffin pan with paper liners and press about 1 tablespoon of the mixture into the bottom of each liner to form the base. Refrigerate while you prepare the filling.

Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth. Gradually add the powdered sugar and vanilla extract, mixing until fully incorporated.

Whip the Cream: In a separate bowl, whip the heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until no streaks remain.

Incorporate Strawberries: Gently fold the diced strawberries into the cheesecake mixture, ensuring even distribution throughout.

Assemble the Bites: Spoon the cheesecake filling on top of the graham cracker crust in the muffin tins, filling each liner to the top. Smooth the tops with a spatula for a neat finish.

Chill: Cover the muffin pan with plastic wrap and refrigerate for at least 4 hours, or overnight to set.

Serve: Once set, remove the cheesecake bites from the muffin pan. Garnish each bite with a fresh strawberry and a light dusting of powdered sugar if desired.

Enjoy: Serve chilled and indulge in these delightful, bite-sized treats!
