2 cups fresh strawberries, hulled and sliced

1/4 cup granulated sugar

2 cups heavy whipping cream

1 teaspoon vanilla extract

8 ounces cream cheese, softened

1/4 cup powdered sugar

1 tablespoon fresh lemon juice

24 graham crackers

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare Strawberries: In a mixing bowl, combine the sliced strawberries and granulated sugar. Toss evenly and let it sit for about 15-20 minutes to allow the strawberries to macerate and release their juices.

    Whip the Cream: In a separate large mixing bowl, use a hand mixer or stand mixer to beat the heavy whipping cream on medium speed until it starts to thicken. Add in the vanilla extract and continue beating until soft peaks form. Set aside.

      Cream Cheese Mixture: In another mixing bowl, beat the softened cream cheese and powdered sugar until smooth and creamy. Add in the lemon juice and mix well until fully combined.

        Combine Mixtures: Gently fold half of the whipped cream into the cream cheese mixture until combined. Then, carefully fold in the remaining whipped cream until no white streaks remain.

          Layer the Cake: In a rectangular dish, spread a thin layer of the cream mixture at the bottom. Place a layer of graham crackers on top.

            Add Strawberries: Spoon half of the macerated strawberries over the graham crackers, followed by another layer of the cream mixture spread evenly on top.

              Repeat Layers: Add another layer of graham crackers, followed by the remaining strawberries, then top with the remaining cream mixture. Finish with one last layer of graham crackers on top.

                Chill: Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight; this allows the flavors to meld together and the graham crackers to soften.
