Ingredients

1 large head of green cabbage

1 lb ground beef (or turkey for a lighter option)

1 cup cooked rice (jasmine or brown)

1 onion, finely chopped

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, with juices

1 can (8 oz) tomato sauce

1 tablespoon Worcestershire sauce

1 tablespoon soy sauce

1 teaspoon dried thyme

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

1 cup shredded mozzarella cheese (optional for topping)

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Cabbage: Bring a large pot of salted water to a boil. Carefully remove the core from the cabbage and blanch the leaves in boiling water for about 3-5 minutes until soft. Remove and set aside to cool.

Make the Filling: In a large skillet over medium heat, sauté the chopped onion and minced garlic until fragrant and translucent, about 3-4 minutes. Add the ground beef, breaking it up with a spoon, and cook until browned. Drain excess fat if necessary.

Combine Ingredients: In a large mixing bowl, combine the cooked ground beef mixture, cooked rice, diced tomatoes (with juices), tomato sauce, Worcestershire sauce, soy sauce, thyme, paprika, salt, and pepper. Mix well until all ingredients are evenly incorporated.

Assemble the Casserole: Preheat your oven to 350°F (175°C). In a casserole dish, place a layer of cabbage leaves on the bottom. Spoon a generous portion of the meat and rice filling onto the leaves. Add another layer of cabbage on top, followed by more filling. Repeat the layers until all filling is used, finishing with a layer of cabbage.

Top and Bake: If using mozzarella cheese, sprinkle it over the top layer of cabbage. Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and slightly golden.

Garnish and Serve: Once done, remove the casserole from the oven and let it cool for about 10 minutes. Garnish with chopped fresh parsley before serving.
