Stuffed Mushrooms with Spinach Parmesan Cream

16 large cremini or button mushrooms, stems removed

1 cup fresh spinach, chopped

1 cup mascarpone cheese

1/2 cup shredded Parmesan cheese

1/4 cup cream cheese, softened

2 cloves garlic, minced

1/4 teaspoon red pepper flakes (optional, for a little heat)

1 tablespoon olive oil

Salt and pepper to taste

1/4 teaspoon nutmeg

1/4 cup breadcrumbs (for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

    Prepare the Mushrooms: Clean the mushrooms with a damp cloth and remove the stems. Gently hollow out the center of each mushroom cap to make space for the filling.

      Sauté the Spinach: In a skillet, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant (about 1 minute). Then, add the chopped spinach and cook until wilted (about 2-3 minutes). Remove from heat and let cool slightly.

        Make the Filling: In a mixing bowl, combine the mascarpone cheese, cream cheese, and Parmesan cheese. Stir in the sautéed spinach mixture, red pepper flakes (if using), nutmeg, salt, and pepper. Mix until all ingredients are well incorporated.

          Stuff the Mushrooms: Using a spoon or your hands, generously fill each mushroom cap with the spinach and cheese mixture. Pile it high for extra creaminess!

            Add Breadcrumbs: In a small bowl, mix the breadcrumbs with a little olive oil and a pinch of salt. Sprinkle evenly on top of each stuffed mushroom for a delightful crunch.
