2 cups fresh sugar snap peas, trimmed

1 cup cherry tomatoes, halved

1/2 cup thinly sliced radishes

1/4 cup red onion, finely diced

1/3 cup feta cheese, crumbled

1/4 cup fresh mint leaves, chopped

1/4 cup olive oil

2 tablespoons apple cider vinegar

1 tablespoon honey

Salt and pepper, to taste

Optional: Toasted pine nuts or sunflower seeds for crunch

Prepare the Sugar Snap Peas: In a pot of boiling water, blanch the sugar snap peas for about 2 minutes until bright green and tender-crisp. Immediately transfer them to an ice bath to stop the cooking process. Once cooled, drain and pat them dry.

    Combine the Veggies: In a large mixing bowl, combine the blanched sugar snap peas, cherry tomatoes, radishes, and red onion.

      Make the Dressing: In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper until well combined.

        Dress the Salad: Pour the dressing over the vegetable mixture in the bowl. Gently toss everything together until the vegetables are evenly coated in the dressing.
