Ingredients

2 tablespoons olive oil

1 medium zucchini, sliced into half-moons

1 bell pepper (any color), sliced into strips

1 cup cherry tomatoes, halved

1 cup snap peas, trimmed

1 cup corn kernels, fresh or frozen

1 medium carrot, julienned

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

3 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 teaspoon honey (or agave syrup for vegan option)

Salt and pepper to taste

2 green onions, sliced (for garnish)

2 tablespoons sesame seeds (for garnish)

Instructions

Prep Your Veggies: Wash, peel, and cut all vegetables as described. Having everything chopped and ready will make the cooking process smoother.

Heat the Oil: In a large skillet or wok, heat the olive oil over medium-high heat until it shimmers but doesn’t smoke.

Cook the Aromatics: Add the minced garlic and ginger to the hot skillet. Stir-fry for about 30 seconds until fragrant, being careful not to let it burn.

Add the Vegetables: Toss in the sliced zucchini, bell pepper, and carrot first as they take a bit longer to cook. Stir-fry for about 3-4 minutes until they begin to soften.

Incorporate Remaining Veggies: Add the snap peas, corn, and cherry tomatoes to the skillet. Stir everything together and let it cook for an additional 3-4 minutes, until the veggies are tender but still crisp.

Create the Sauce: In a small bowl, mix together the soy sauce, sesame oil, and honey. Pour this mixture into the stir-fry, tossing to coat all the vegetables evenly. Keep cooking for another 2 minutes to let the sauce absorb.

Season: Taste the stir-fry and add salt and pepper as needed. Adjust sweetness with more honey or soy sauce if desired.

Serve: Remove the skillet from heat. Plate the stir-fry and garnish with sliced green onions and sesame seeds for an extra touch of flavor and crunch.

Enjoy: This vibrant, flavorful dish can be enjoyed on its own or served over rice or noodles for a hearty meal.
