2 cans of young green jackfruit in water or brine (not syrup)

1 tablespoon olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon ground cinnamon

1/4 teaspoon cayenne pepper (adjust for spice level)

Salt and pepper to taste

1 cup BBQ sauce (store-bought or homemade)

4 whole grain burger buns

Coleslaw (optional, for topping)

Pickles (optional, for garnish)

Prepare the Jackfruit: Drain and rinse the jackfruit thoroughly under cold water. With a fork or your hands, shred the jackfruit pieces into pulled meat and set aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for 3-4 minutes until translucent. Stir in the garlic and cook for an additional 1-2 minutes until fragrant.

      Season the Jackfruit: Add the shredded jackfruit to the skillet, followed by the smoked paprika, ground cumin, ground cinnamon, cayenne pepper, salt, and pepper. Mix well to ensure the jackfruit is coated with the spices.

        Simmer: Pour in the BBQ sauce and reduce the heat to low. Stir to combine everything, then cover the skillet and let it simmer for 20-25 minutes. Stir occasionally, allowing the jackfruit to absorb the flavors and become tender.

          Prepare the Buns: While the jackfruit is simmering, lightly toast the burger buns in a toaster or on a skillet until golden brown.

            Assemble the Sandwiches: Once the jackfruit is cooked and flavorful, remove it from heat. Using a fork, shred any larger pieces to create a pulled texture. Spoon a generous amount of the pulled jackfruit onto the bottom half of each toasted burger bun.
