1 pound boneless, skinless chicken thighs (cut into bite-sized pieces)

1 cup fresh pineapple chunks (or canned, drained)

2 tablespoons olive oil

1 red bell pepper (sliced)

1 green bell pepper (sliced)

1 small onion (sliced)

2 cloves garlic (minced)

1 teaspoon ginger (grated)

1/4 cup soy sauce (low sodium)

2 tablespoons honey

1 tablespoon sriracha (adjust to taste)

1 tablespoon rice vinegar

1 teaspoon cornstarch (mixed with 2 tablespoons water)

Salt and pepper to taste

1/4 cup chopped green onions (for garnish)

Sesame seeds (for garnish, optional)

Instructions
 

Marinate the Chicken: In a bowl, combine the soy sauce, honey, sriracha, rice vinegar, ginger, and garlic. Add the chicken pieces, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes (or up to 2 hours for maximum flavor).

    Cook the Chicken: Heat the olive oil in a large skillet or wok over medium-high heat. Remove the chicken from the marinade (reserve the marinade) and add it to the skillet. Cook for about 5-7 minutes until browned and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the sliced onion and bell peppers. Sauté for 4-5 minutes until the vegetables are tender but still crisp.

        Combine Ingredients: Return the chicken to the skillet with the vegetables. Pour in the reserved marinade and stir well. Allow the mixture to simmer for 2-3 minutes.

          Thicken the Sauce: Stir in the cornstarch mixture and cook for another 1-2 minutes until the sauce thickens. Add the pineapple chunks and cook for an additional 2 minutes until heated through.
