1 cup mixed berries (strawberries, blueberries, raspberries, and blackberries)

1/4 cup granola (optional for topping)

Fresh mint leaves for garnish (optional)

Prepare the Chia Pudding: In a medium mixing bowl, combine chia seeds, almond milk, honey (or maple syrup), and vanilla extract. Whisk together until everything is well mixed. Allow the mixture to sit for about 10-15 minutes, stirring occasionally, until it thickens to a pudding-like consistency.

    Layer the Cups: In serving cups or jars, start by adding a layer of the thickened chia pudding at the bottom (about 1/3 full).

      Add Yogurt: Next, dollop a generous layer of Greek yogurt over the chia pudding, filling the cups about two-thirds of the way full.
