Ingredients

1 lb ground chicken

2 tablespoons olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 cup bell peppers, diced (red and yellow for color)

1/2 cup green onions, sliced

1/2 cup shredded carrots

1/2 cup chopped cilantro

1 head of butter or iceberg lettuce, leaves separated

Lime wedges, for serving

Salt and pepper to taste

Instructions

Prepare the Pan: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

Cook the Chicken: Add the ground chicken to the skillet, breaking it apart with a spatula. Cook until browned and fully cooked through, about 6-8 minutes.

Flavor It Up: Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.

Add Sauces: Pour in the sweet chili sauce, soy sauce, rice vinegar, and sesame oil. Stir everything together until the chicken is well coated and the mixture is heated through.

Mix in Vegetables: Add the diced bell peppers, shredded carrots, and half of the sliced green onions. Stir until everything is well mixed and heated, about another 2-3 minutes. Season with salt and pepper to taste.

Assembly Time: Spoon the chicken mixture into the separated lettuce leaves, creating little wraps.

Garnish & Serve: Top each wrap with chopped cilantro and the remaining sliced green onions. Serve with lime wedges on the side for an extra zest.
