1 lb (450g) boneless chicken breast, cut into bite-sized pieces

1 ripe mango, diced

1/4 cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon honey

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon lime juice

1/4 cup chopped fresh cilantro (for garnish)

Marinate the Chicken: In a large bowl, combine the sweet chili sauce, soy sauce, sesame oil, honey, minced garlic, grated ginger, salt, pepper, and lime juice. Whisk until fully combined.

    Add Chicken: Add the diced chicken to the marinade. Toss to coat all the chicken pieces thoroughly. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

      Prepare Baking Sheet: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.

        Arrange Chicken Bites: Once marinated, take the chicken out of the fridge and arrange the pieces on the prepared baking sheet in a single layer, leaving a little space between each piece for even cooking.

          Bake the Chicken: Place the baking sheet in the oven and bake for 15-20 minutes, or until the chicken is cooked through and lightly golden, flipping halfway to ensure even browning.

            Add Mango: During the last 5 minutes of baking, scatter the diced mango over the chicken bites. Return to the oven and bake until the mango is warm and slightly caramelized.
