Sweet Corn & Bacon Queso Dip

1 cup fresh sweet corn kernels (or frozen)

6 slices of thick-cut bacon, diced

1 tablespoon olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 jalapeño, seeded and finely chopped (adjust for heat preference)

1 teaspoon ground cumin

1 teaspoon smoked paprika

2 cups shredded cheddar cheese

1 cup cream cheese, softened

1 cup milk (adjust for desired thickness)

1/2 cup diced tomatoes (canned or fresh, drained)

1/4 cup chopped fresh cilantro (for garnish)

Salt and pepper, to taste

Tortilla chips, for serving

Instructions
 

Cook the Bacon: In a large skillet over medium heat, add the diced bacon. Cook until crispy, about 8-10 minutes. Use a slotted spoon to transfer the cooked bacon to a paper towel-lined plate, leaving the bacon drippings in the skillet.

    Sauté Vegetables: In the same skillet with the bacon drippings, add olive oil if needed. Add the chopped onion, jalapeño, and minced garlic. Sauté for about 5 minutes until the onion is translucent.

      Add Corn and Spices: Stir in the sweet corn kernels, ground cumin, and smoked paprika. Cook for another 3-4 minutes until the corn is slightly tender. Season with salt and pepper to taste.

        Combine Cheeses: Lower the heat to medium-low, then add the cream cheese, milk, shredded cheddar cheese, and diced tomatoes. Stir until the cheeses have melted and the mixture is smooth and creamy. If the dip is too thick, add more milk to reach your desired consistency.
