Ingredients

4 cups fresh sweet corn kernels (or frozen if not in season)

1 medium onion, diced

2 cloves garlic, minced

1 medium potato, diced (Yukon Gold or similar)

2 cups vegetable broth

1 cup coconut milk (or heavy cream for richness)

1 teaspoon smoked paprika

1/2 teaspoon ground cumin

Salt and pepper, to taste

2 tablespoons olive oil

1 tablespoon unsalted butter

Fresh chives or cilantro, for garnish

Lime wedges, for serving (optional)

Instructions

Sauté the Aromatics: In a large pot, heat the olive oil and butter over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Toss in the minced garlic and sauté for another minute until fragrant.

Add the Vegetables: Stir in the diced potato, corn kernels, smoked paprika, and ground cumin. Cook for another 2-3 minutes, allowing the spices to coat the vegetables.

Pour in the Broth: Add vegetable broth to the pot, bringing the mixture to a gentle simmer. Cover and let it cook for about 15-20 minutes, or until the potatoes are tender.

Blend the Chowder: Once the potatoes are soft, remove a couple of cups of the soup and blend until smooth for a creamy texture (you can use an immersion blender directly in the pot if preferred). Return the blended soup into the pot, mixing well.

Add Creaminess: Pour in the coconut milk (or heavy cream) and stir until fully incorporated. Simmer uncovered for an additional 5 minutes, allowing the chowder to thicken slightly. Season with salt and pepper to taste.

Serve: Ladle the chowder into bowls, garnishing with freshly chopped chives or cilantro. Serve with lime wedges on the side for an extra pop of flavor if desired.

Enjoy! This cozy chowder can be enjoyed hot, providing warmth and nourishment.
