Sweet Corn Fritters with Aioli

Ingredients
  

2 cups fresh sweet corn kernels (or frozen, thawed)

1 cup all-purpose flour

1/2 cup cornmeal

2 large eggs

1/2 cup milk

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/4 tsp black pepper

1/4 cup chopped fresh chives (or green onions)

1/4 cup grated Parmesan cheese

Vegetable oil for frying

For the Aioli:

1/2 cup mayonnaise

2 cloves garlic, minced

1 tbsp lemon juice

1 tsp Dijon mustard

Salt and pepper to taste

Prepare the Aioli: In a small bowl, combine the mayonnaise, minced garlic, lemon juice, and Dijon mustard. Mix well until smooth and creamy. Season with salt and pepper to taste. Cover and refrigerate until ready to serve.

    Make the Fritter Batter: In a large mixing bowl, combine the flour, cornmeal, baking powder, baking soda, salt, and black pepper. Whisk until well combined.

      Add the Wet Ingredients: In a separate bowl, beat the eggs and then add the milk. Pour the wet mixture into the dry ingredients, stirring until just combined.

        Fold in the Corn and Cheese: Gently fold the sweet corn kernels, chopped chives, and grated Parmesan cheese into the batter until evenly distributed.

          Heat the Oil: In a large skillet or frying pan, add enough vegetable oil to cover the bottom. Heat over medium heat until hot, but not smoking.

            Fry the Fritters: Using a ladle or a 1/4 cup measure, scoop the batter and carefully place it into the hot oil, flattening it slightly with the back of the scoop. Fry about 3-4 fritters at a time, depending on your pan size. Cook for about 3-4 minutes on each side or until they are golden brown and crispy.

              Drain: Once cooked, transfer the fritters to a plate lined with paper towels to drain excess oil. Repeat until all the batter is used, adding more oil as needed.

                Serve: Serve the warm fritters with the zesty aioli on the side for dipping. Garnish with additional chopped chives, if desired.
