Sweet Corn & Tomato Salad

Ingredients
  

2 cups fresh sweet corn kernels (about 3-4 ears of corn)

2 cups cherry tomatoes, halved (any color variety works great)

1 red bell pepper, diced

1/4 red onion, finely chopped

1 avocado, diced

1/4 cup fresh cilantro leaves, chopped

Juice of 2 limes

3 tablespoons extra-virgin olive oil

1 teaspoon honey (optional for sweetness)

Salt and pepper to taste

1/4 teaspoon chili flakes (optional for spice)

Instructions
 

Prep the Corn: If using fresh corn, bring a pot of water to a boil. Add the corn and blanch for about 3 minutes. Remove, cool under cold water, and slice the kernels off the cob. If using frozen corn, simply thaw and drain.

    Mix the Veggies: In a large mixing bowl, combine the sweet corn, cherry tomatoes, diced bell pepper, finely chopped red onion, and diced avocado. Gently toss to combine without mashing the avocado.

      Make the Dressing: In a small bowl, whisk together the lime juice, extra-virgin olive oil, honey (if using), salt, pepper, and chili flakes until well blended.

        Combine Together: Pour the dressing over the salad and add the fresh cilantro. Toss gently again to coat all the ingredients with the dressing.

          Serve: Transfer to a serving platter or individual bowls. You can chill it in the refrigerator for about 15-30 minutes to let the flavors meld, but it can also be served immediately.

            Garnish (Optional): Add extra cilantro or a sprinkle of feta cheese for an added flavor boost just before serving.
