Sweet Peach Crumble Bars

For the Peach Filling:

3 cups fresh peaches, peeled and diced (about 4-5 medium-sized peaches)

1/4 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 tablespoon cornstarch

1/2 teaspoon ground cinnamon

For the Crumble Base and Topping:

1 cup all-purpose flour

1/2 cup old-fashioned rolled oats

1/2 cup brown sugar, packed

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, melted (1 stick)

1/4 cup chopped nuts (optional, walnuts or pecans work well)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line an 8x8 inch (20x20 cm) baking pan with parchment paper, allowing some overhang for easy removal later.

    Prepare the Filling: In a medium bowl, combine the diced peaches, granulated sugar, lemon juice, vanilla extract, cornstarch, and ground cinnamon. Stir until the peaches are evenly coated. Set the mixture aside to let the juices blend.

      Make the Crumble Mixture: In a large bowl, mix together the flour, rolled oats, brown sugar, baking soda, and salt. Pour in the melted butter and stir until the mixture is crumbly and resembles wet sand. If you're using nuts, add them at this stage.

        Assemble the Bars: Take about two-thirds of the crumble mixture and press it into the bottom of the prepared pan to form an even layer. Bake in the preheated oven for 10 minutes.

          Add the Peach Filling: Remove the pan from the oven and carefully spoon the peach mixture over the baked crust, spreading it evenly.

            Top with Crumble: Crumble the remaining one-third of the oat mixture over the peach filling.

              Bake: Return the pan to the oven and bake for an additional 30-35 minutes, or until the top is golden brown and the peach filling is bubbly.

                Cool and Serve: Once baked, remove the pan from the oven and allow the bars to cool in the pan for at least 20 minutes. Use the parchment paper to lift the bars out of the pan and let them cool completely on a wire rack before slicing into squares.

                  Enjoy: Serve warm with a scoop of vanilla ice cream or enjoy at room temperature with a sprinkle of powdered sugar.
