4 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 cup carrot, grated

1/2 cup sweet pickles, diced (plus 2 tablespoons of pickle juice)

1/4 cup red onion, finely chopped

1/2 cup mayonnaise

1/4 cup plain Greek yogurt

2 tablespoons apple cider vinegar

2 tablespoons honey

2 tablespoons poppy seeds

Salt and pepper to taste

Instructions
 

In a large mixing bowl, combine the shredded green cabbage, red cabbage, grated carrot, diced sweet pickles, and red onion. Toss gently to mix all the vegetables.

    In a separate bowl, whisk together the mayonnaise, Greek yogurt, apple cider vinegar, honey, and pickle juice until smooth and well-combined.

      Add the poppy seeds to the dressing and mix thoroughly. Season with salt and pepper to taste.

        Pour the dressing over the vegetable mixture. Toss everything together until the slaw is evenly coated with the dressing.

          Taste and adjust seasoning with more salt, pepper, or honey, depending on your preference.

            Cover the bowl with plastic wrap or transfer the slaw to an airtight container. Refrigerate for at least 1 hour before serving to allow the flavors to meld together and the cabbage to soften slightly.
