1 lb boneless, skinless chicken breast, cut into bite-sized pieces

1 cup fresh pineapple, diced (reserve some juice)

1/2 cup soy sauce

1/4 cup honey

2 tablespoons rice vinegar

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon cornstarch mixed with 2 tablespoons water (to thicken)

1 tablespoon sesame oil

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Salt and pepper, to taste

Marinate the Chicken: In a bowl, combine the soy sauce, honey, rice vinegar, minced garlic, ginger, and reserved pineapple juice. Add the chicken pieces and let them marinate for at least 30 minutes in the refrigerator.
