4 boneless, skinless chicken breasts

1 cup fresh pineapple chunks (can use canned if needed)

1 cup teriyaki sauce

1/2 cup bell peppers, sliced (red and yellow for color)

1/2 cup red onion, sliced

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 cup cooked jasmine rice (for serving)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Salt and pepper, to taste

Optional: steamed broccoli for serving

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Chicken: In a large baking dish, place the chicken breasts and season both sides with salt and pepper.

      Make the Teriyaki Sauce Mixture: In a bowl, combine the teriyaki sauce, minced garlic, and grated ginger. Mix well to incorporate the flavors.

        Add Pineapple and Vegetables: Scatter the fresh pineapple chunks, sliced bell peppers, and red onion over the chicken in the baking dish.

          Pour the Sauce: Drizzle the teriyaki sauce mixture generously over the chicken and vegetables. Ensure everything is well coated.

            Bake the Dish: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 25 minutes.

              Uncover and Finish Baking: After 25 minutes, remove the foil and continue to bake for an additional 15-20 minutes, or until the chicken is cooked through and has an internal temperature of 165°F (75°C). The sauce should be bubbling, and the vegetables should be tender.

                Serve: Remove from the oven and let it cool for a couple of minutes. Serve the chicken and vegetable mixture over jasmine rice, garnished with chopped green onions and a sprinkle of sesame seeds. If desired, pair with steamed broccoli on the side.
