Sweet Potato Chili

2 medium sweet potatoes, peeled and diced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (28 oz) crushed tomatoes

1 medium onion, diced

3 garlic cloves, minced

1 bell pepper (any color), diced

1-2 jalapeños, finely chopped (adjust based on desired heat level)

2 tsp ground cumin

1 tsp smoked paprika

1 tsp chili powder

½ tsp cayenne pepper (optional for extra heat)

4 cups vegetable broth

Salt and black pepper, to taste

2 tbsp olive oil

Fresh cilantro, for garnish

Avocado slices, for serving

Lime wedges, for serving

Instructions
 

Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add the diced onion, garlic, and bell pepper. Sauté for about 5 minutes, or until the onions become translucent.

    Add Sweet Potatoes & Spices: Stir in the diced sweet potatoes, jalapeños, cumin, smoked paprika, chili powder, and cayenne pepper. Cook for an additional 5 minutes, stirring occasionally.

      Incorporate Beans & Tomatoes: Add the black beans, kidney beans, and crushed tomatoes to the pot. Stir to combine the ingredients thoroughly.

        Simmer the Chili: Pour in the vegetable broth, then season with salt and black pepper to taste. Bring the mixture to a boil, then reduce the heat and let it simmer uncovered for about 25-30 minutes, or until the sweet potatoes are tender.

          Check For Consistency: If you prefer a thicker chili, you can mash some of the sweet potatoes against the side of the pot with a spoon.

            Taste and Adjust: Before serving, taste the chili and adjust the seasoning if needed, adding more salt, pepper, or spices to your liking.
