Sweet Potato Lentil Curry

2 medium sweet potatoes, peeled and diced

1 cup green or brown lentils, rinsed

1 medium onion, finely chopped

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 can (14 oz) coconut milk

1 can (14 oz) diced tomatoes

2 cups vegetable broth or water

2 tablespoons olive oil

2 teaspoons curry powder

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon turmeric

1/4 teaspoon cayenne pepper (adjust to taste)

Salt and black pepper to taste

Fresh cilantro, chopped (for garnish)

Juice of 1 lime

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.

    Add Spices: Sprinkle the curry powder, ground cumin, ground coriander, turmeric, and cayenne pepper over the onion mixture. Stir and cook for about 1 minute until the spices are well combined and aromatic.

      Incorporate Sweet Potatoes & Lentils: Add the diced sweet potatoes and rinsed lentils to the pot, stirring to coat them in the spice mixture.

        Add Liquids: Pour in the coconut milk, diced tomatoes (with their juices), and vegetable broth. Stir to combine everything and bring to a gentle boil.

          Simmer: Reduce the heat to low and cover the pot. Allow the curry to simmer for 25-30 minutes, or until the lentils and sweet potatoes are tender. Stir occasionally and add more water or broth if the curry becomes too thick.

            Season: Once cooked, taste and adjust the seasoning with salt, black pepper, and lime juice. Stir well to combine.

              Serve: Ladle the curry into bowls, garnishing each with chopped cilantro. Serve hot, accompanied by rice, naan, or crusty bread.
