2 large sweet potatoes

1 tablespoon olive oil

1 teaspoon chili powder

1/2 teaspoon cumin

1/2 teaspoon garlic powder

1 cup black beans, rinsed and drained

1 cup corn (fresh or frozen)

1 cup cherry tomatoes, halved

1 avocado, diced

1 cup shredded cheese (cheddar or a vegan alternative)

1/4 cup fresh cilantro, chopped

1 lime, cut into wedges

Sour cream or Greek yogurt (for serving, optional)

Jalapeño slices (for topping, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare Sweet Potatoes: Wash and peel the sweet potatoes. Slice them into thin rounds, about 1/4 inch thick.

      Season the Sweet Potatoes: In a large mixing bowl, toss the sweet potato slices with olive oil, chili powder, cumin, garlic powder, salt, and pepper until evenly coated.

        Bake the Sweet Potatoes: Arrange the sweet potato slices in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for about 20-25 minutes or until they are golden and crispy, flipping halfway through.
