Ingredients

1 cup rolled oats

1 cup all-purpose flour (or whole wheat flour)

1 cup canned pumpkin puree

1/2 cup brown sugar, packed

1/4 cup maple syrup

1/2 cup milk (dairy or non-dairy)

1/4 cup vegetable oil or melted coconut oil

2 large eggs

1 teaspoon vanilla extract

1 tablespoon pumpkin pie spice (or 1/2 tsp cinnamon, 1/4 tsp nutmeg, 1/4 tsp ginger, and 1/4 tsp allspice)

1 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

Optional: 1/2 cup chopped nuts or chocolate chips for added texture

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease with oil.

Mix Dry Ingredients: In a large bowl, combine the rolled oats, flour, pumpkin pie spice, baking soda, baking powder, and salt. Whisk together until thoroughly mixed.

Prepare Wet Ingredients: In another bowl, whisk together the pumpkin puree, brown sugar, maple syrup, milk, oil, eggs, and vanilla extract until smooth and well combined.

Combine Mixtures: Pour the wet mixture into the bowl with the dry ingredients. Gently fold until just combined. Be careful not to overmix— a few lumps are okay! If using, fold in the chopped nuts or chocolate chips.

Fill Muffin Tins: Evenly distribute the batter into the prepared muffin tin, filling each cup about 3/4 full.

Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Serve: Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.

Enjoy: These muffins are delicious warm or at room temperature. They can be stored in an airtight container for up to a week or frozen for longer storage.
