Sweet & Spicy Pineapple Chicken Stir Fry

1 lb (450 g) chicken breast, thinly sliced

1 cup fresh pineapple, diced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup snap peas

1 small red onion, thinly sliced

3 cloves garlic, minced

1 inch ginger, grated

3 tablespoons soy sauce

2 tablespoons honey

1 tablespoon sriracha (adjust to taste)

1 tablespoon rice vinegar

2 tablespoons vegetable oil

Salt and pepper, to taste

Sesame seeds, for garnish

Fresh cilantro, chopped, for garnish

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken slices with 1 tablespoon of soy sauce, salt, and pepper. Allow it to marinate for about 15-20 minutes while you prepare the other ingredients.

    Prepare the Sauce: In a separate bowl, whisk together the remaining soy sauce, honey, sriracha, and rice vinegar. Set aside.

      Heat the Wok: In a large wok or frying pan, heat 2 tablespoons of vegetable oil over medium-high heat.

        Cook the Chicken: Once the oil is hot, add the marinated chicken to the wok in a single layer. Cook for about 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Remove the chicken from the wok and set aside.

          Stir-Fry the Vegetables: In the same wok, add the sliced onion and cook for 2 minutes until it starts to soften. Then add the minced garlic and grated ginger, stirring continuously for another 30 seconds until fragrant.

            Add Peppers and Snap Peas: Toss in the sliced red and yellow bell peppers, snap peas, and diced pineapple. Stir-fry for 3-4 minutes until the vegetables are just tender but still crisp.

              Combine and Add Sauce: Return the cooked chicken to the wok and pour the sauce over everything. Stir well to coat all the ingredients evenly. Cook for an additional 2-3 minutes, allowing the sauce to thicken slightly.

                Garnish and Serve: Once everything is well combined and heated through, remove from heat. Garnish with sesame seeds and freshly chopped cilantro before serving.

                  Enjoy: Serve hot over cooked rice or noodles, if desired.
