1 (15 oz) can kidney beans, drained and rinsed

1 (15 oz) can chili beans in sauce

1 cup diced tomatoes (fresh or canned)

1 cup onion, diced

1 tsp garlic powder

1 tsp chili powder

1 tsp cumin

1/2 tsp paprika

Salt and pepper to taste

For the Burritos:

4 large flour tortillas

1 cup nacho cheese sauce (jarred or homemade)

1 1/2 cups shredded cheddar cheese

1/2 cup sour cream

1 cup lettuce, shredded (optional)

1/2 cup pico de gallo (optional)

Instructions
 

Prepare the Chili: In a medium saucepan, combine the kidney beans, chili beans, diced tomatoes, diced onion, garlic powder, chili powder, cumin, paprika, salt, and pepper. Bring to a simmer over medium heat, stirring occasionally. Reduce heat to low and let it cook for 15-20 minutes until heated through and flavors meld.

    Warm the Tortillas: While the chili is cooking, warm the flour tortillas in a microwave for about 10-15 seconds until pliable, or heat them in a dry skillet over medium heat for 30 seconds on each side.

      Assemble the Burritos: On each warm tortilla, spread a layer of nacho cheese sauce down the center. Add a generous amount of the chili mixture on top, followed by a sprinkle of shredded cheddar cheese. If desired, add a spoonful of sour cream, shredded lettuce, and pico de gallo.

        Roll the Burritos: Fold in the sides of the tortilla over the filling, then roll from the bottom up to enclose the filling completely. Tuck in the sides as you roll to secure everything inside.
