Ingredients

1 lb ground beef or turkey

1 packet taco seasoning

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup ranch dressing

1 cup black beans, rinsed and drained

1 cup corn (canned or frozen)

1/4 cup green onions, chopped

1/4 cup fresh cilantro, chopped

1 cup tortilla chips, crushed

1/2 cup diced tomatoes (optional)

Salt and pepper to taste

12 small taco shells or tortilla cups

Additional toppings: sour cream, guacamole, sliced jalapeños (optional)

Instructions

Prepare the Filling:

    - In a large skillet over medium heat, cook the ground beef or turkey until browned and cooked through, breaking it into crumbles as it cooks. Drain any excess fat.

      - Stir in the taco seasoning and a splash of water (about 1/4 cup) to help the seasoning mix. Simmer for about 5 minutes until it thickens. Remove from heat and let it cool slightly.

        Make the Creamy Mixture:

          - In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, and ranch dressing. Mix until well blended and creamy.

            Combine and Season:

              - In the same bowl, fold in the cooked meat, black beans, corn, green onions, cilantro, and optional diced tomatoes. Season with salt and pepper to taste. Mix everything until evenly incorporated.

                Fill the Taco Shells:

                  - Preheat your oven to 350°F (175°C).

                    - Arrange the small taco shells or tortilla cups on a baking sheet. Carefully spoon the filling mixture into each shell, packing them slightly but ensuring they don't overflow.

                      Add the Crunch:

                        - Sprinkle the crushed tortilla chips over the filled tacos to add a crunchy layer on top.

                          Bake:

                            - Place the baking sheet in the preheated oven and bake for about 15-20 minutes, or until the taco shells are golden and the filling is heated through.

                              Serve:

                                - Remove from the oven and let cool for a few minutes. Serve warm with additional toppings such as sour cream, guacamole, and sliced jalapeños.
