2 cups cooked, shredded chicken

1 cup BBQ sauce (your choice)

8 ounces tortilla chips

1 ½ cups shredded sharp cheddar cheese

1 cup black beans, rinsed and drained

1 cup corn kernels (frozen or fresh)

1 medium red onion, diced

1 jalapeño, sliced (optional, adjust according to heat preference)

1 avocado, diced

¼ cup fresh cilantro, chopped

½ cup sour cream

1 lime, cut into wedges

Salt and pepper to taste

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Chicken Mixture: In a medium bowl, combine the shredded chicken and BBQ sauce. Mix until the chicken is fully coated with the sauce. Add salt and pepper to taste.

      Layer Nachos: On a large baking sheet or oven-safe platter, spread out the tortilla chips evenly. Spoon the BBQ chicken mixture over the tortilla chips, ensuring it’s evenly distributed.

        Add Layers: Sprinkle black beans, corn, half of the shredded cheddar cheese, diced red onion, and jalapeños (if using) over the chicken.

          Cheese on Top: Finally, top with the remaining shredded cheese to ensure a gooey finish.

            Bake: Place the nachos in the preheated oven and bake for about 10-12 minutes, or until the cheese is bubbly and slightly golden.

              Garnish: Remove from the oven and let cool slightly. Top with diced avocado, fresh cilantro, and a dollop of sour cream.

                Serve: Squeeze fresh lime juice over the nachos, and serve hot with extra lime wedges on the side!
