Ingredients

4 boneless, skinless chicken breasts

1 cup pomegranate juice

1/2 cup ketchup

1/4 cup honey

2 tablespoons apple cider vinegar

2 tablespoons soy sauce

1 tablespoon Worcestershire sauce

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional, for heat)

Salt to taste

Fresh pomegranate seeds (for garnish)

Fresh cilantro (for garnish)

Instructions

Marinate the Chicken: In a large bowl, whisk together the pomegranate juice, ketchup, honey, apple cider vinegar, soy sauce, Worcestershire sauce, smoked paprika, garlic powder, onion powder, black pepper, cayenne pepper, and salt. Reserve 1/2 cup of this mixture for basting later. Add the chicken breasts to the bowl, ensuring they are well coated. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.

Preheat the Grill: If you are using a grill, preheat it to medium-high heat. If using an oven, preheat to 375°F (190°C).

Prepare the Chicken for Grilling: Remove the chicken from the marinade and let it sit for about 10-15 minutes at room temperature. Discard the used marinade.

Grill the Chicken: Place the marinated chicken breasts on the hot grill. Cook for about 6-7 minutes on one side. Then, flip the chicken over, baste with the reserved marinade, and grill for another 6-7 minutes, until the chicken is cooked through (internal temperature should reach 165°F or 75°C).

Oven Option: If using the oven, place the chicken breasts in a baking dish, brush with the reserved marinade, and bake for 25-30 minutes, or until cooked through.

Rest the Chicken: Once cooked, remove the chicken from the grill or oven and let it rest for 5 minutes. This allows the juices to redistribute, keeping the chicken moist.

Serve: Slice the chicken and arrange it on a serving platter. Garnish with fresh pomegranate seeds and chopped cilantro for a vibrant finish. Serve with additional BBQ sauce on the side if desired.
