Ingredients

1 pound sirloin steak, cut into 1-inch cubes

1 tablespoon olive oil

1 teaspoon sea salt

½ teaspoon freshly ground black pepper

½ teaspoon smoked paprika

2 tablespoons fresh parsley, chopped

2 tablespoons fresh rosemary, chopped

2 tablespoons fresh thyme leaves

3 tablespoons unsalted butter, softened

2 cloves garlic, minced

Juice of 1 lemon

Skewers (soaked in water if wooden)

Instructions

Marinate the Steak:

In a large bowl, combine the cubed sirloin steak with olive oil, sea salt, black pepper, and smoked paprika. Toss until evenly coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.

      Prepare the Herb Butter:

In a small bowl, mix the softened butter, minced garlic, lemon juice, parsley, rosemary, and thyme until well combined. Season with a pinch of salt and pepper. Set aside.

          Assemble the Skewers:

Remove the steak from the fridge and thread the marinated cubes onto the skewers, leaving a little space between each piece to ensure even cooking.

              Grill the Skewers:

Preheat your grill to medium-high heat. Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until they reach your desired level of doneness (medium-rare is typically around 130-135°F).

                  Baste with Herb Butter:

During the last few minutes of grilling, generously baste the skewers with the prepared herb butter, allowing it to melt and infuse the steak with flavor.

                      Serve:

Remove the skewers from the grill, let rest for a few minutes, then serve hot, drizzling any remaining herb butter over the top for added flavor.
