Ingredients

1.5 lbs sirloin or filet mignon, cut into 1-inch cubes

1/4 cup olive oil

3 tablespoons fresh rosemary, finely chopped

3 tablespoons fresh thyme, finely chopped

2 tablespoons fresh parsley, finely chopped

4 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon Worcestershire sauce

1/2 cup unsalted butter, softened

Zest of 1 lemon

1 tablespoon lemon juice

Skewers (either metal or soaked wooden skewers)

Instructions

Marinate the Steak: In a large bowl, combine the olive oil, rosemary, thyme, parsley, garlic, salt, pepper, and Worcestershire sauce. Add the steak cubes to the marinade and toss until well coated. Cover and let it marinate in the refrigerator for at least 1 hour (up to overnight for deeper flavor).

Prepare the Herb Butter: In a medium bowl, mix the softened butter with lemon zest, lemon juice, and a pinch of salt. Stir until well combined. Set aside at room temperature or refrigerate until ready to use.

Assemble Skewers: Preheat your grill or grill pan over medium-high heat. While it's heating, thread the marinated steak cubes onto the skewers, leaving a little space in between each piece for even cooking.

Grill the Skewers: Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the steak reaches your desired level of doneness (approx. 4-5 minutes per side for medium-rare).

Serve with Herb Butter: Remove the skewers from the grill and let them rest for a few minutes. Serve them warm, topped with a generous dollop of the herb butter, allowing it to melt over the steak for extra flavor.

Garnish (optional): You can sprinkle some additional fresh herbs over the skewers before serving for an added pop of color and flavor.
