2 cups rolled oats

1 cup sliced almonds

1 cup unsweetened shredded coconut

1/2 cup honey or maple syrup

1/4 cup coconut oil, melted

1/2 teaspoon vanilla extract

1/2 teaspoon sea salt

1 teaspoon ground cinnamon

1/2 cup dried cranberries or raisins (optional)

1/2 cup chocolate chips (optional)

Instructions
 

Preheat Oven:

    Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.

      Mix Dry Ingredients:

        In a large mixing bowl, combine the rolled oats, sliced almonds, shredded coconut, sea salt, and ground cinnamon. Stir to ensure everything is evenly distributed.

          Combine Wet Ingredients:

            In a separate bowl, whisk together the melted coconut oil, honey (or maple syrup), and vanilla extract until well combined.

              Combine Mixtures:

                Pour the wet mixture over the dry ingredients and mix well until all the dry ingredients are coated with the wet ingredients.

                  Spread on Baking Sheet:

                    Dump the granola mixture onto the prepared baking sheet, spreading it into an even layer. Press it down gently with a spatula to form clusters.

                      Bake:

                        Bake in the preheated oven for 15-20 minutes, stirring halfway through, until the granola is golden brown and fragrant. Keep an eye on it in the last few minutes to prevent burning.

                          Cool Down:

                            Remove the baking sheet from the oven and let the granola cool completely on the baking sheet. It will continue to harden as it cools.

                              Add Extras:

                                Once cool, stir in the dried cranberries or raisins and chocolate chips if using.

                                  Store:

                                    Transfer the cooled granola to an airtight container for storage. It will keep well for up to two weeks.
