2 cups rolled oats

1 cup sliced almonds

1 cup unsweetened coconut flakes

1/4 cup honey or maple syrup

1/2 cup coconut oil, melted

1/2 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon sea salt

1/2 cup dried fruit (such as cranberries, apricots, or raisins) - optional

1/4 cup chia seeds or flaxseeds (optional for added nutrition)

Instructions
 

Preheat the Oven: Preheat your oven to 300°F (150°C) and line a large baking sheet with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, sliced almonds, coconut flakes, cinnamon, and sea salt. If you are adding chia seeds or flaxseeds, mix them in at this stage.

      Combine Wet Ingredients: In a small bowl or jug, whisk together the melted coconut oil, honey (or maple syrup), and vanilla extract until well combined.

        Combine Wet and Dry: Pour the wet mixture over the dry ingredients. Stir well to ensure that all the dry ingredients are evenly coated with the wet mixture.

          Spread on Baking Sheet: Transfer the granola mixture onto the prepared baking sheet and spread it out evenly. Press it down slightly with a spatula to help it clump together.

            Bake: Place the baking sheet in the preheated oven and bake for about 20-25 minutes, stirring halfway through. Keep a close eye on the granola – you want it to be golden brown and toasty but not burnt.

              Add Dried Fruit (if using): Once the granola is done baking, remove it from the oven and let it cool completely on the baking sheet. Once cooled, stir in the dried fruit if desired.

                Store: Once cooled, break the granola into clusters and store it in an airtight container. It will keep well for up to two weeks (if it lasts that long!).
