4 cups all-purpose flour

2 teaspoons instant yeast

1 teaspoon sugar

1 teaspoon salt

1 1/2 cups warm water (110°F)

1/4 cup unsalted melted butter

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)

1 tablespoon fresh parsley, chopped

1/2 teaspoon red pepper flakes (optional)

1/2 cup grated Parmesan cheese

Extra melted butter for brushing

Sea salt for topping

Activate the Yeast: In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

    Prepare the Dough: In a large mixing bowl, combine flour and salt. Slowly add the yeast mixture and melted butter; mix until a dough starts to form.

      Knead the Dough: Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Place the kneaded dough in an oiled bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.

        Make the Garlic Butter Mixture: In a small saucepan over low heat, melt 1/4 cup of butter. Add the minced garlic, rosemary, parsley, and red pepper flakes (if using). Stir for 2-3 minutes until fragrant, then remove from heat.

          Shape the Rolls: Once the dough has risen, punch it down and divide it into 12 equal pieces. Roll each piece into a long rope (about 8 inches), then tie it into a knot. Place each knotted roll on a parchment-lined baking sheet.

            Brush with Garlic Butter: Generously brush the tops of each roll with the garlic butter mixture. Sprinkle with grated Parmesan cheese and a pinch of sea salt.

              Second Rise: Cover the rolls with a damp cloth and let them rise for another 30 minutes.

                Preheat the Oven: Preheat your oven to 375°F (190°C).

                  Bake the Rolls: Bake the rolls in the preheated oven for 20-25 minutes, or until golden brown and cooked through. Halfway through baking, brush them again with any remaining garlic butter for extra flavor.
