Tomato Basil Couscous Salad

Ingredients
  

1 cup couscous

1 ½ cups vegetable broth (or water)

1 cup cherry tomatoes, halved

½ cup cucumber, diced

½ cup red bell pepper, diced

¼ cup red onion, finely chopped

¼ cup fresh basil leaves, torn

¼ cup feta cheese, crumbled (optional)

3 tablespoons olive oil

2 tablespoons fresh lemon juice

1 teaspoon honey or agave syrup

Salt and pepper, to taste

Instructions
 

Prepare the Couscous: In a medium saucepan, bring the vegetable broth (or water) to a boil. Once boiling, remove from heat, and stir in the couscous. Cover and let it rest for about 5 minutes until the liquid is absorbed. Fluff with a fork and let it cool.

    Chop the Vegetables: While the couscous is cooling, wash and prepare the vegetables. Halve the cherry tomatoes, dice the cucumber and red bell pepper, and finely chop the red onion.

      Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, honey (or agave), salt, and pepper until well combined.

        Combine Ingredients: In a large mixing bowl, combine the cooled couscous, cherry tomatoes, cucumber, red bell pepper, red onion, and torn basil leaves. If using, add the crumbled feta cheese.

          Dress the Salad: Pour the dressing over the salad mixture and toss gently until everything is well coated. Taste and adjust seasoning with more salt, pepper, or lemon juice as needed.

            Chill and Serve: Let the salad sit for about 15-30 minutes at room temperature or refrigerate for 1 hour to allow flavors to meld. Serve chilled or at room temperature, garnished with additional basil leaves if desired.
