Tomato Feta Skewers

Ingredients
  

1 pint cherry tomatoes

8 oz feta cheese, cut into 1-inch cubes

1/4 cup fresh basil leaves

1/4 cup extra virgin olive oil

2 tablespoons balsamic glaze

1 teaspoon dried oregano

Salt and pepper, to taste

12-16 wooden skewers or metal skewers

Instructions
 

Prep the Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill. If using metal skewers, you can skip this step.

    Assemble the Skewers: Start by threading a cherry tomato onto a skewer, followed by a basil leaf, and then a cube of feta cheese. Repeat this process until the skewer is nearly filled, leaving a little space at the bottom for handling. A good pattern to follow is tomato, basil, feta, tomato, basil, feta, etc.

      Season the Skewers: Once all skewers are assembled, drizzle with olive oil and sprinkle with dried oregano, salt, and pepper to taste.

        Grill or Broil: Preheat your grill or broiler to medium-high heat. Grill the skewers for about 3-4 minutes on each side, or until the tomatoes are slightly blistered and the feta is warmed but not melted. If broiling, place skewers on a baking tray and broil for 5-6 minutes, turning halfway through.

          Drizzle with Balsamic Glaze: Once cooked, remove the skewers from the grill or oven. Drizzle the balsamic glaze over the skewers while they are still warm for added sweetness and tang.
